A few weeks ago I posted pics of beach food that included a breakfast quiche with tomatoes. The recipe can be found here.
This morning I decided to make a smaller, lighter version of the quiche. I didn’t measure anything, I just kind of tossed in what I wanted. I used about 5 eggs and maybe 1/3 of a roll of sage sausage. I also eliminated the pie shell and just poured everything directly into a glass pan sprayed with olive oil. An un-quiche, if you will.
It was delicious! It didn’t taste any different than the original recipe. It was just missing the crust.
This is a great, and easy, way to switch up breakfast. Regan and I both grubbed this morning!







you can pour the mixture into muffin tins, either full size or mini size and then pop them out when done and store them in a tupper in the refer for two-three days and heat up in microwave when you need a fast out the door breakfast.
I’ve done that. Awesome breakfast to go.

I never make my quiche with crust. It is something about eggs in a pie shell that grosses me out!
